Masala Sambhar / Selavu Sambhar | Side Dish for Idli Dosa

We make this Masala sambhar in our house as a side-dish for Idli/dosas. This is better known as varutha selavu sambhar where we fry the ingredients and bring to boil for sambhar.



Ingredients:
Onion - chopped 1 cup
Tomato chopped - 1/2 cup 
Chopped Potatoes - cut into 1/2" cubes - 1 cup
Mustard seeds - 1/2 tsp
Urad dhal - 1/2 tsp
Water - 3 or 4 cups
Curry leaves -  a few
Oil - 2 tsp

Roast and grind:
Cloves - 2
Cinnamon - 1/2" stick
Coriander seeds - 1 heaped tsp
Cumin seeds - 1/2 tsp
Rice - 1/2 tsp
Dried red chillies - 5
Curry leaves - a few
Grated coconut - 3 tsp
Oil - 1 tsp

Method:
Heat 1 tsp of oil and add all the ingredients for roasting except coconut. Roast in medium heat until the rice turns light brown. Add the coconut and give a quick mix and turn off the heat. Let it cool and make a paste.
Heat 2 tsp of oil and add the mustard seeds. When it splutters add the urad dhal, curry leaves and then the onion. Saute onion until it is transparent, now add the potatoes and saute for 3 mins. Now add the ground paste and salt and add 3-4 cups of water and allow it to boil until the raw smell disappears and the masala is cooked well. Serve hot with Idlies or Dosas.
